I think everyone's already mentioned the Shado Library. There are also a few stories on www.fanfiction.net including some by Denise Felt, I believe, which are very good. (Also two I think of mine, not that, like Pam, I would overly self-promote... ;) ).

Does anyone write UFO fan fiction? Whatta question! Mwa ha ha! Check out the
